1 kg meaty beef bone
4 piece(s) green topocho plantains (cooking plantains), peeled and cut
500 gr ahuyama (squash), peeled and chopped
1/4 cup(s) corn flour dissolved in water
1/4 cup(s) rice
250 gr batatas (sweet potatoes), peeled and chopped
250 gr ñame (yam), peeled and chopped
4 piece(s) scallion stalks
2 tbsp wild cilantro, chopped
1/2 piece(s) onoto (achiote)
pinch salt and pepper to taste
Directions
  1. Cook the bone and scallion in the water for 45 minutes.
  2. Remove the scallion, add the plantains and yam and let boil for 20 minutes.
  3. Add the sweet potatoes, ahuyama, flour, rice, onoto, salt and pepper, and cover the pot.
  4. Lower to medium heat and let simmer for 20 minutes.
  5. Serve with chopped cilantro over each portion.
