Mondongo Soup (Tripe Soup)

Ingredients
2 mondongo (tripe)
½ beef shank
1 potatoes
½ yuca (cassava)
1 carrot
1 chayote
3 garlic, minced
1 onion
1 sweet pepper
1 culantro (cilantro)
1 celery
salt and pepper to taste
Directions
  1. In a pot, place the mondongo and beef shank in 3 liters of water and cook for one hour.
  2. When the mondongo is cooked, cut it into strips, as well as the vegetables.
  3. Add all the broth.
  4. Season with garlic, onion, pepper, celery, and culantro.
  5. Season with salt and pepper to taste.
