beef shank

Directions
- In a pot, place the mondongo and beef shank in 3 liters of water and cook for one hour.
- When the mondongo is cooked, cut it into strips, as well as the vegetables.
- Add all the broth.
- Season with garlic, onion, pepper, celery, and culantro.
- Season with salt and pepper to taste.
