Directions
- Sofrito ½ pound (250 g) of onion, peeled and chopped · 3 cloves garlic, chopped · 1 ripe tomato, peeled and chopped · 2 tablespoons oil · salt.
- Sauté all sofrito ingredients in oil, stirring until a sauce forms.
- Put yam to cook until almost dissolved (approximately 45 minutes), add cheese, sofrito and bleo leaves; leave on medium heat for about 10 minutes.
- Add suero and cook for 5 more minutes.
- Serve with coconut rice and a little chopped and sautéed onion, sprinkled on top with lemon juice incorporated.
