Ingredients
10 cup(s) water
2 kg yam peeled and chopped
1 piece(s) pound (500 g) of queso criollo (farmer's cheese), diced
3 tbsp suero (whey)
1 tbsp lemon juice
Directions
  1. Sofrito ½ pound (250 g) of onion, peeled and chopped · 3 cloves garlic, chopped · 1 ripe tomato, peeled and chopped · 2 tablespoons oil · salt.
  2. Sauté all sofrito ingredients in oil, stirring until a sauce forms.
  3. Put yam to cook until almost dissolved (approximately 45 minutes), add cheese, sofrito and bleo leaves; leave on medium heat for about 10 minutes.
  4. Add suero and cook for 5 more minutes.
  5. Serve with coconut rice and a little chopped and sautéed onion, sprinkled on top with lemon juice incorporated.
