Ingredients
10 cup(s) basic broth
2 cup(s) milk
500 gr fava beans (chickpeas or peas)
1/2 cup(s) onion, chopped
2 tbsp butter
1/4 cup(s) wheat flour
250 gr matchstick-fried potatoes
1 cup(s) heavy cream
pinch salt and pepper to taste
Directions
  1. Cook the fava beans (chickpeas or peas) in the broth with pepper until they soften (for 1 hour).
  2. Remove, mash (or blend with a little broth), return to the broth and dissolve stirring.
  3. Heat the butter and sauté the onion, add the flour dissolved in cold milk with salt, stir and also add to the broth, which is cooked over low heat for 15 minutes.
  4. Serve in plates, garnished with a tablespoon of cream and matchstick potatoes on top.
