Ingredients
For the dough:

lard

margarine

cup(s) cold water
salt to taste

pinch pinch sugar dissolved in cold water
For the filling:

fresh grated coconuts

vanilla

sugar

ground cinnamon

cloves

nutmeg
Directions
- Make the dough by kneading. Sift the flour, salt, lard, and margarine. Mix in folding motions and add water. When firm, let it rest.
- Cook the coconut with sugar, vanilla, and everything else, forming a cajeta. Let it dry. Cut the dough into small pieces as desired and with your hand form unions. Fill with coconut. Grease and flour a pan and bake.
- Nowadays they sell grated coconut in bags to make the work easier. There are Atlantic and Pacific coconuts. The Atlantic has more diameter and is more bulbous. The Pacific is elongated. They prefer the Atlantic, it has better flavor.
