Ingredients
7 semi-hard corn ears (just past milk stage)
1/2 pork
1/2 beef ribs
1 bay leaf
2 potatoes
3 oregano leaves
2 carrots
1 pipián (squash)
3 garlic cloves
1 medium onion
1 celery leaf
2 chopped leeks
1 sweet bell pepper
1 culantro plant
1 bouillon cube
salt, hot chili pepper to taste
Directions
  1. Brown the corn ears on the wood stove, then scrape and cook with a tablespoon of salt until the corn puffs up.
  2. Cook the meat separately with bay leaf, three oregano leaves, one garlic, and a teaspoon of salt. Then boil the corn with the meat and spices. When the flavors combine, add the chopped vegetables, bouillon, hot chili pepper, and salt to taste.
