Ingredients
2 home-raised hens
4 water
2 chicken bouillon cubes
½ tiquizque
½ yuca (cassava)
½ potatoes
½ sweet potato
2 carrots
1 ayote
1 pipián (if available)
1 garlic
2 onions
1 sweet pepper
1 roll(s) culantro
1 roll(s) yerbabuena (spearmint)
2 achiote
salt and pepper to taste
Ingredients for the meatballs:
2 masa (corn dough)
1 onion
1 sweet pepper
1 roll(s) culantro
1 small bunch of yerbabuena (spearmint)
2 chicken bouillon cubes
½ oil
Directions
  1. Cut the hens into pieces and put them to boil in the 4 liters of water with the vegetables and culantro, onion, sweet pepper, garlic, bouillon cubes, pepper and salt.
  2. Meatball preparation:
  3. Then remove the breasts, shred them and mix all the ingredients.
  4. Form small balls and fry them in the oil.
  5. Then add them to the soup and turn off the heat.
  6. The balls will cook with the residual heat.
  7. If it's too greasy when cooling, place lettuce leaves on top of the soup, as the grease will stick to the leaves.
  8. If you want it a little thicker, take some of the same masa, mix it with a little water and a little strained broth and add it to the soup.
