Ingredients
1500 gr muchacho (eye of round)
1 piece(s) grated or finely chopped head onion
1 tbsp dark soy sauce
1 tsp oregano
2 tbsp oil
pinch salt to taste
1 cup(s) prepared coffee
1 cup(s) orange juice
Directions
  1. Mix the onion with salt, dark soy sauce and oregano. With this combination season the meat well and let rest for at least 3 hours.
  2. After this time, heat oil in a thick pot and brown the meat on all sides to seal it. Then add orange juice and coffee, cover and cook over medium heat for 1½-2 hours, or until the meat is tender.
  3. Cut the muchacho into portions, serve and bathe with the sauce produced from cooking.
