piece(s) grated or finely chopped head onion

tbsp dark soy sauce

tsp oregano

tbsp oil
pinch salt to taste

cup(s) prepared coffee

cup(s) orange juice
Directions
- Mix the onion with salt, dark soy sauce and oregano. With this combination season the meat well and let rest for at least 3 hours.
- After this time, heat oil in a thick pot and brown the meat on all sides to seal it. Then add orange juice and coffee, cover and cook over medium heat for 1½-2 hours, or until the meat is tender.
- Cut the muchacho into portions, serve and bathe with the sauce produced from cooking.
