10 cup(s) potato broth [see p. 280]
4 piece(s) eggs
1/2 cup(s) milk
1 tbsp cream
1 tbsp cilantro (fresh coriander), finely chopped
1 cup(s) chopped bread
Directions
  1. Pour the 4 egg whites, little by little, beating them in the boiling potato broth, and add the chopped bread to taste.
  2. Beat the 4 yolks and a little cream in half a cup of milk and add to the broth, stirring, before serving with the cilantro.
