Ingredients
3 cup(s) ripe mango pulp, blended and strained
1 cup(s) heavy cream
4 piece(s) eggs, beaten
3 tbsp unflavored gelatin, dissolved in 1/4 cup warm water
1 piece(s) cup of sugar
Directions
  1. Beat the egg whites to stiff peaks and gradually add the yolks and sugar, little by little, while continuing to beat.
  2. Mix the mango juice, heavy cream and gelatin (they should be well incorporated).
  3. Then mix in the beaten mixture slowly, with folding movements, pour everything into a mold, and leave in the refrigerator for several hours.
  4. Remove and unmold.
  5. Can be bathed with custard sauce to serve.
