Ingredients
1 kg turtle meat
1/2 cup(s) guiso (Colombian sofrito) [see p. 319]
1 piece(s) glass of red wine
8 piece(s) eggs, beaten
4 tbsp oil
pinch salt and pepper to taste
Directions
  1. Cook the turtle meat in water for at least 2 hours (until tender).
  2. Remove and chop finely.
  3. Put to simmer in a mixture of the sofrito and wine, for 10 minutes, stirring.
  4. Add the beaten eggs and mix well.
  5. In another pan, on medium heat, heat the oil, pour in the mixture and cover so it sets and becomes like an omelette, or stir so it becomes like scrambled eggs.
