cup(s) guiso (Colombian sofrito) [see p. 319]

piece(s) glass of red wine

piece(s) eggs, beaten

tbsp oil
pinch salt and pepper to taste
Directions
- Cook the turtle meat in water for at least 2 hours (until tender).
- Remove and chop finely.
- Put to simmer in a mixture of the sofrito and wine, for 10 minutes, stirring.
- Add the beaten eggs and mix well.
- In another pan, on medium heat, heat the oil, pour in the mixture and cover so it sets and becomes like an omelette, or stir so it becomes like scrambled eggs.
