Ingredients
12 cup(s) water
750 gr ribs
1 piece(s) piece of oxtail cleaned
250 gr pork cracklings, toasted and chopped
250 gr guandú (pigeon peas), soaked overnight
500 gr yam, peeled and chopped
500 gr yuca (cassava), peeled and chopped
1 piece(s) green plantain peeled and cut into small pieces
2 piece(s) yellow plantains cut into slices
1 cup(s) guiso [see p. 319]
1/2 cup(s) queso costeño (coastal cheese), grated (optional)
pinch salt and pepper to taste
Directions
  1. Put guandú to cook with ribs and oxtail until tender, approximately 45 minutes.
  2. Then add plantains, yam, yuca, guiso, salt and pepper and continue cooking for approximately 40 minutes.
  3. About 10 minutes before serving add cracklings and cook on medium heat.
  4. Can be served with grated cheese on top.
