Ingredients
1 cup(s) sugar
3 milk
2 egg yolks
sour lime peel (from ½ lime)
Directions
  1. Put the milk on the heat with the sugar and lime peels. Lower the temperature a bit when it starts to boil and leave for about 30 minutes more or less.
  2. Then begin to stir occasionally with a large wooden spoon, and as it thickens, you need to stir more frequently so it doesn't stick to the bottom of the pot, which should preferably be deep.
  3. When you can see the bottom while stirring, let it boil for 5 more minutes, without stopping the stirring for a moment.
  4. Then remove and continue beating, adding the yolks one by one, beating very well and quickly after each one. Continue stirring until it reaches the necessary point, that is, when lifting the spoon the cajeta doesn't fall, or also you know when it has completely lost its shine.
  5. It is delicious, but you need patience to make it.
  6. Can be garnished with sugared figs.
