Directions
- First wash the arracache, peel it and cut it into thick strips, then grind it in an arracache grinding machine.
- Next bring 4 liters of water to a boil. When the water is boiling, add the ground arracache, then cook for 10 minutes and let it rest for another 10 minutes.
- Subsequently, place the arracache in a cloth bag and drain. Next, sauté the chopped garlic for 5 minutes in a pot, then add the chopped onion, chopped bell pepper, and chopped culantro, and let it sauté for another 5 minutes.
- Also add the ground beef and chorizo and the rest of the ingredients, stirring constantly for about 15 minutes. (Serves 50 people)
