Picadillo de Arracache (Arracacha Hash - San Isidro)

Ingredients
5 arracache (arracacha)
1/2 chorizo
4 oil or lard
2 beef bouillon cubes
1 achiote (annatto)
1 salt
1 Lizano sauce or equivalent
1 onion
1 head of garlic
1/2 ground beef
1 stick of margarine
pepper to taste
1 bunch of culantro
1 sweet pepper
Directions
  1. First wash the arracache, peel it and cut it into thick strips, then grind it in an arracache grinding machine.
  2. Next bring 4 liters of water to a boil. When the water is boiling, add the ground arracache, then cook for 10 minutes and let it rest for another 10 minutes.
  3. Subsequently, place the arracache in a cloth bag and drain. Next, sauté the chopped garlic for 5 minutes in a pot, then add the chopped onion, chopped bell pepper, and chopped culantro, and let it sauté for another 5 minutes.
  4. Also add the ground beef and chorizo and the rest of the ingredients, stirring constantly for about 15 minutes. (Serves 50 people)
