Ingredients
1 kg arracache (white carrot)
1 kg cecina (cured beef)
pinch salt to taste
thyme
cilantro
oregano
sweet pepper
onion
garlic
1 pinch achiote (annatto)
Directions
  1. Cook meat with all aromatics. Once cold, shred and chop.
  2. Separately, sauté garlic, culantro, and sweet pepper, add meat with pinch of achiote.
  3. Add salt to taste, then incorporate arracache and stir.
