kg arracache (white carrot)
1
kg cecina (cured beef)
pinch salt to taste
thyme
cilantro
oregano
sweet pepper
onion
garlic

pinch achiote (annatto)
Directions
- Cook meat with all aromatics. Once cold, shred and chop.
- Separately, sauté garlic, culantro, and sweet pepper, add meat with pinch of achiote.
- Add salt to taste, then incorporate arracache and stir.
