800 gr sliced beef shank (fracosta) or colardella
500 gr peeled tomatoes
1 tbsp oregano
1 cup(s) extra virgin olive oil
2 garlic cloves
0.5 cup(s) white wine
salt and pepper
Directions
  1. Pound the meat slices and clean them of sinews while leaving a little fat. 
  2. Arrange them in a wide pan, salt them, add the peeled tomatoes without juice divided in half, the oil, the wine, the garlic in pieces or whole, the oregano, the salt and the pepper. 
  3. Cover the pan with a lid and cook over medium heat for about an hour until the sauce is glossy and dry.
