2 cup(s) cornstarch
8 cup(s) milk
500 gr grated or ground panela
pinch cinnamon sticks to taste
Directions
  1. Put to cook over medium heat 6 cups of milk with cornstarch, removing the foam that forms. Meanwhile dissolve the grated or ground panela in the remaining 2 cups of milk, to add this mixture to the pot along with cinnamon sticks to taste.
  2. Lower heat and continue cooking without stopping stirring until it reaches its point. If desired, can add fresh grated coconut, raisins, cloves or ½ cup aguardiente. Serve in molds, cover with raisins and cinnamon powder, and let cool. In some preparations, this natilla is bathed using a syrup made with orange blossoms, which is achieved by mixing 1 cup sugar, 1 cup water and ½ cup orange blossom water.
