Directions
- Remove the fish's scales, gills, viscera and bile. Reserve the head to make into broth. Then clean the meat well, cut in small pieces and add salt to taste.
- Fry the fish pieces in very hot oil until they acquire a golden color and the desired texture.
- Remove, drain and serve accompanied with patacones, fariña and gamitana head broth.
