pinch salt to taste
oil for frying
Directions
  1. Remove the fish's scales, gills, viscera and bile. Reserve the head to make into broth. Then clean the meat well, cut in small pieces and add salt to taste.
  2. Fry the fish pieces in very hot oil until they acquire a golden color and the desired texture.
  3. Remove, drain and serve accompanied with patacones, fariña and gamitana head broth.
