kg fish (capaz preferably), scaled and cleaned
2
kg yuca, peeled and cut
4
piece(s) green cooking plantains, peeled and cut
plantain leaves
pinch salt to taste
Directions
- Dig a hole in ground (not very deep) and place four layers of plantain leaves, on which place yuca and plantain and, on top of these, salted fish.
- Cover everything with several layers of other leaves, ensuring to cover well to prevent soiling with earth.
- Then cover everything with removed earth and prepare fire directly on top, feeding generously so it lasts minimum 2 hours.
- Remove embers, lift earth and remove viudo, served in same plantain leaves it was cooked in.
