Ingredients
2 kg fish (capaz preferably), scaled and cleaned
2 kg yuca, peeled and cut
4 piece(s) green cooking plantains, peeled and cut
plantain leaves
pinch salt to taste
Directions
  1. Dig a hole in ground (not very deep) and place four layers of plantain leaves, on which place yuca and plantain and, on top of these, salted fish.
  2. Cover everything with several layers of other leaves, ensuring to cover well to prevent soiling with earth.
  3. Then cover everything with removed earth and prepare fire directly on top, feeding generously so it lasts minimum 2 hours.
  4. Remove embers, lift earth and remove viudo, served in same plantain leaves it was cooked in.
