Ingredients
500 gr hearts of palm (araucana palm)
12 piece(s) eggs, beaten
1/2 cup(s) hogo (Colombian tomato-onion sauce) [see p. 319]
3 tbsp butter
Directions
  1. Cook the hearts of palm until tender, approximately 1 hour.
  2. Remove, chop and mix with the eggs and hogo.
  3. Scramble in butter as for pericos (scrambled eggs).
