Directions
- Remove kernels and grind the corn (until you get a milky masa).
- Add salt, sugar (or grated panela and optionally milk).
- Heat a budare (iron or clay griddle) and grease with beef fat, lard or butter.
- With a large spoon take out portions and cook, turning them carefully.
- It is customary to eat them with grated white cheese sprinkled on top.
