Ingredients
1 kg white Chocó yam, peeled, cooked and mashed
2 piece(s) beaten eggs
2 tbsp butter
500 gr ground pork
500 gr potatoes, peeled, cooked and diced
2 tbsp oil
1 cup(s) refrito (Pacific-style sauce)
2 piece(s) hard-boiled eggs, finely chopped
1 piece(s) egg yolk
1/4 cup(s) milk
pinch salt and pepper to taste
Directions
  1. Mix yam masa, eggs, butter, salt and pepper.
  2. Knead well and spread on damp table or aluminum foil.
  3. Separately sauté in oil the meat and potatoes, add refrito and let cook few minutes, stirring.
  4. Then prepare greased mold and cover bottom with half the masa.
  5. Spread meat stew and cover with other half of masa.
  6. Glaze with yolk beaten in milk and bake in preheated oven at 350° for 20 minutes.
