kg white Chocó yam, peeled, cooked and mashed

piece(s) beaten eggs

tbsp butter

gr ground pork
500
gr potatoes, peeled, cooked and diced

tbsp oil
1
cup(s) refrito (Pacific-style sauce)

piece(s) hard-boiled eggs, finely chopped

piece(s) egg yolk

cup(s) milk
pinch salt and pepper to taste
Directions
- Mix yam masa, eggs, butter, salt and pepper.
- Knead well and spread on damp table or aluminum foil.
- Separately sauté in oil the meat and potatoes, add refrito and let cook few minutes, stirring.
- Then prepare greased mold and cover bottom with half the masa.
- Spread meat stew and cover with other half of masa.
- Glaze with yolk beaten in milk and bake in preheated oven at 350° for 20 minutes.
