Directions
- Sauce ½ cup vinegar · ¼ cup annatto oil · 1 cup water · 1 tablespoon wheat flour · 3 tablespoons guiso [see p. 319].
- To prepare sauce dissolve flour in water, mix with vinegar, guiso and oil and cook, stirring, for 10 minutes.
- Knead meats and gradually incorporate cornstarch, eggs, onions, garlic, mustard, beer, peppers, capers, cilantro and seasonings, without stopping kneading.
- Form meatballs and let rest 15 minutes.
- Heat sauce and simmer meatballs for approximately 35 minutes, without covering pot, until they look cooked and sauce is thick.
- Serve over layer of white rice.
