Ingredients
3 cup(s) rice, washed
500 gr ahuyama (West Indian pumpkin)
5 1/2 cup(s) coconut milk
2 tbsp coconut oil
salt
Directions
  1. Peel ahuyama and cut into small cubes, sauté in oil and mix with rice and salt in coconut milk.
  2. Bring everything to boil on medium heat until milk evaporates; cover, lower to gentle heat and let finish drying.
