Directions
- Brine 2 pounds (1 kg) onions cut into thin slices · 2 red bell peppers cut into thin strips · 4 cloves garlic, crushed · ½ cup capers · 2 tablespoons sugar · 1 tablespoon mustard · 2 cups vinegar · 2 cups oil (preferably olive) · 1 tablespoon whole peppercorns · salt to taste.
- Marinate sierra slices for about 2 hours in lemon juice, pepper, salt and nutmeg, ensuring they are well bathed.
- Remove, dry, cover with flour and fry in hot oil until golden.
- Remove and place in glass (or enameled) container, cover with brine, previously prepared, and let marinate for 24 hours.
- Fish can be kept refrigerated up to one month, making sure it always remains covered by sauce and has no air bubbles.
