Ingredients
1500 gr (1 1/2 kg) sierra (king mackerel), cut into thick slices
1/2 cup(s) wheat flour
4 piece(s) lemon juice
1 tbsp ground pepper
1/2 tsp nutmeg
pinch pinch of salt

Directions
  1. Brine 2 pounds (1 kg) onions cut into thin slices · 2 red bell peppers cut into thin strips · 4 cloves garlic, crushed · ½ cup capers · 2 tablespoons sugar · 1 tablespoon mustard · 2 cups vinegar · 2 cups oil (preferably olive) · 1 tablespoon whole peppercorns · salt to taste.
  2. Marinate sierra slices for about 2 hours in lemon juice, pepper, salt and nutmeg, ensuring they are well bathed.
  3. Remove, dry, cover with flour and fry in hot oil until golden.
  4. Remove and place in glass (or enameled) container, cover with brine, previously prepared, and let marinate for 24 hours.
  5. Fish can be kept refrigerated up to one month, making sure it always remains covered by sauce and has no air bubbles.
