Ingredients
10 piece(s) egg whites
2 cup(s) sugar
1 piece(s) pinch of cream of tartar
drops of vinegar
1/2 tsp vanilla (or anise extract)
1/2 tsp brandy or any liquor
Directions
  1. Beat the egg whites to stiff peaks, add the drops of vinegar, cream of tartar and, little by little, the sugar.
  2. When the whites are firm, add the vanilla (or anise).
  3. Take out spoonfuls and place on a greased pan, bring to preheated oven at 150°, for 2 hours; turn off the oven and leave until the oven cools completely.
  4. Meringues, more than cooking, dry in the oven.
  5. Any sudden temperature change (for example, opening the door too soon) makes them crack.
