Rice and Beans (Afro-Caribbean Coconut Rice and Beans)

Ingredients
2 rice
1 cup(s) cooked red beans
1 large coconut
1 chile panameño (Panamanian hot pepper)
2 garlic cloves
1 thyme sprig
salt to taste
Directions
  1. Grate the coconut and extract the milk with warm water.
  2. In a pot put the coconut milk, beans, garlic, thyme and Panamanian pepper.
  3. When it boils, add the rice and salt.
  4. Cook over low heat until the rice is soft and dry.
  5. Serve with chicken, fish or meat.
