large coconut

chile panameño (Panamanian hot pepper)

thyme sprig
salt to taste
Directions
- Grate the coconut and extract the milk with warm water.
- In a pot put the coconut milk, beans, garlic, thyme and Panamanian pepper.
- When it boils, add the rice and salt.
- Cook over low heat until the rice is soft and dry.
- Serve with chicken, fish or meat.
