Ingredients
750 fresh arracache (Peruvian parsnip)
300 pork roast
1 small onion
1 sprig(s) celery
1 small pepper
3 garlic
1 achiote (annatto)
2 lard
1 sprig(s) thyme and oregano leaves
Directions
  1. Peel the arracache and cut it into small cubes, drain it.
  2. Then cook in a pot and drain it.
  3. Cook the meat and chop it into small cubes.
  4. In a pan, place the lard and the achiote.
  5. Chop all the aromatics and sauté over heat, add the meat and the hash.
  6. Sweat until the desired texture is achieved.
