Indio Viejo (Traditional Meat and Tortilla Stew)

Ingredients
12 corn tortillas
2 beef broth
2 dried beef (cecina)
½ tomato
1 large onion
1 sweet pepper
1 roll(s) culantro coyote (wild coriander)
1 small roll of spearmint
1 achiote (annatto)
1 pinch pepper and salt
1 beef bouillon cube
1 stick of garlic margarine
2 oil
2 water
Directions
  1. Boil the meat in two liters of water.
  2. Reserve the leftover broth to soak the tortillas in it.
  3. Then chop and sauté the onion, tomato, sweet pepper, culantro, and spearmint in two tablespoons of oil and a stick of garlic margarine.
  4. Add the meat to the sofrito.
  5. Then blend the tortilla with the broth, pepper, and achiote and 30 minutes later it's ready.
