Gallina Enjarrada (Jarred Hen)

Ingredients
1 whole hen or chicken, without feet, head or giblets
3 culantro (sawtooth coriander)
3 garlic
6 hard-boiled eggs or egg tortas
6 corn tortillas
1 achiote (annatto)
4 lard
salt to taste
Directions
  1. In a pot with water, cook the whole chicken with garlic, salt, and culantro.
  2. Once cooked, remove it from the pot and let it drain for a while.
  3. Then on a large comal, place the lard with the achiote.
  4. When it's very hot, brown the chicken, making sure to turn it so it browns evenly.
  5. Place the chicken on a large plate and cover it with slices of hard-boiled egg or tortas, then with the tortillas.
  6. In some places, it's customary to give it as a gift and for that it's wrapped in plantain leaves.
