Ingredients

whole hen or chicken, without feet, head or giblets
3
culantro (sawtooth coriander)

garlic

hard-boiled eggs or egg tortas
6
corn tortillas
1
achiote (annatto)

lard
salt to taste
Directions
- In a pot with water, cook the whole chicken with garlic, salt, and culantro.
- Once cooked, remove it from the pot and let it drain for a while.
- Then on a large comal, place the lard with the achiote.
- When it's very hot, brown the chicken, making sure to turn it so it browns evenly.
- Place the chicken on a large plate and cover it with slices of hard-boiled egg or tortas, then with the tortillas.
- In some places, it's customary to give it as a gift and for that it's wrapped in plantain leaves.
