culantro coyote (wild cilantro)
achiote (annatto)
lime juice

Directions
- Finely chop the gaspar until achieving a texture similar to ground meat.
- Place the gaspar fillet in a container and add all the finely chopped aromatics along with the achiote, salt, and lime juice and mix.
- Cover the container and let it rest for about 30 minutes.
- Place oil to taste in a pan and let it heat.
- Then add the gaspar mixture and cook until it becomes loose.
- Serve with white rice and cooked green plantain.
