Gaspar Chorizo (Winner)

Ingredients
2 gaspar fish fillet
½ onion
2 sweet peppers
5 garlic
2 celery
culantro coyote (wild cilantro)
achiote (annatto)
lime juice
salt
Directions
  1. Finely chop the gaspar until achieving a texture similar to ground meat.
  2. Place the gaspar fillet in a container and add all the finely chopped aromatics along with the achiote, salt, and lime juice and mix.
  3. Cover the container and let it rest for about 30 minutes.
  4. Place oil to taste in a pan and let it heat.
  5. Then add the gaspar mixture and cook until it becomes loose.
  6. Serve with white rice and cooked green plantain.
