Rice with Pork Tico-Nica Style

achiote (annatto)
(Serves 6 portions)
Directions
- In a bag, place the pork ribs and add the juice of the two limes and salt so that when cooking the rice with the meat it has a tangy flavor.
- Then in a pot with a pinch of margarine, sauté the aromatics, the pepper, the onion and a few cilantro leaves.
- Next add the pork ribs without the lime juice, only with the achiote, sauté the meat again for a few seconds.
- When it's ready, add water until it covers the meat, let it boil until the meat is tender.
- Once ready, add the raw rice and let it cook until it bursts, then add the rest of the cilantro and mint.
- Cook the plantains in a pot with water cut in half. When they are cooked, add them to the rice with the ribs.
- This way we will enjoy a delicious and wonderful rice with pork tico-nica style.
