Rice with Pork Tico-Nica Style

Ingredients
1 pork ribs
2 rice
1 large tomato
2 ripe plantains
1 small sprig(s) mint
1 sweet pepper, diced
1 onion, diced
1 roll(s) cilantro
2 limes
salt to taste
½ achiote (annatto)
(Serves 6 portions)
Directions
  1. In a bag, place the pork ribs and add the juice of the two limes and salt so that when cooking the rice with the meat it has a tangy flavor.
  2. Then in a pot with a pinch of margarine, sauté the aromatics, the pepper, the onion and a few cilantro leaves.
  3. Next add the pork ribs without the lime juice, only with the achiote, sauté the meat again for a few seconds.
  4. When it's ready, add water until it covers the meat, let it boil until the meat is tender.
  5. Once ready, add the raw rice and let it cook until it bursts, then add the rest of the cilantro and mint.
  6. Cook the plantains in a pot with water cut in half. When they are cooked, add them to the rice with the ribs.
  7. This way we will enjoy a delicious and wonderful rice with pork tico-nica style.
