Ingredients
2 kg potatoes
1 kg arracache (Peruvian parsnip)
1 kg meat (cecina/dried beef)
garlic, lard, achiote (annatto), oregano, salt, pepper
Directions
  1. Cook potatoes with peel, then peel and dice. Cook arracache and chop in machine, same with meat. Mix potato with arracache and add salt.
  2. Fry meat with garlic and oregano, add potato with arracache, and fry for 30 minutes. Add pepper. Can accompany with homemade tortillas.
