kg potatoes

kg arracache (Peruvian parsnip)
1
kg meat (cecina/dried beef)
garlic, lard, achiote (annatto), oregano, salt, pepper
Directions
- Cook potatoes with peel, then peel and dice. Cook arracache and chop in machine, same with meat. Mix potato with arracache and add salt.
- Fry meat with garlic and oregano, add potato with arracache, and fry for 30 minutes. Add pepper. Can accompany with homemade tortillas.
