Picadillo de Papa con Carne (Potato and Beef Hash)

Ingredients
3 potatoes
1 salted beef
¼ lard
1 head(s) garlic
3 sweet peppers
1 sprig(s) celery
1 large onion
3 bouillon cubes
2 beef bouillon packets
2 culantro castilla (cilantro)
salt to taste
cumin seeds (ground) to taste
1 achiote (annatto)
Directions
  1. Put the meat to cook in chunks with the pepper, ½ head of garlic, the onion, the celery, the culantro, and add the salt.
  2. When it is tender, remove it, let it cool, and shred it.
  3. Cook the potatoes, peel them, and chop them into small pieces.
  4. In a very hot pot, fry in the lard ½ head of crushed garlic and the achiote.
  5. Add the chopped potatoes, the meat, and add the cumin, the bouillon cubes, and the bouillon.
  6. Stir constantly until it boils for five more minutes.
  7. Serves 25 people.
