Ingredients
2 arracache (Peruvian parsnip)
1 large onion
1 large sweet pepper
3 garlic
1 bouillon
1 regular oil
1 salted dried beef
3 culantro (cilantro leaves)
1 sprig(s) small oregano
1/2 achiote (annatto)
2 celery
3 Worcestershire sauce
salt to taste
Directions
  1. Peel and chop the arracache, pass it through warm water and then drain it.
  2. Cook the meat with garlic, oregano, culantro, and bouillon.
  3. Then chop the meat. Sauté the chopped aromatics in the three teaspoons of oil with the eighth of a tablespoon of achiote, add the meat, the three tablespoons of Worcestershire sauce, and the arracache.
  4. Mix until the flavors blend together.
