Ingredients
500 gr rice
2 cup(s) water
250 gr queso costeño, grated
pinch salt to taste
Directions
  1. Clean the rice, wash it, drain it, and let it dry in the sun for 1 hour.
  2. When thoroughly dry, pass it through a mill to obtain rice flour.
  3. In a pot, place the water with salt to taste, and when it boils, gradually add 10 tablespoons of rice flour, stirring continuously to prevent lumps from forming.
  4. Pour this mixture into a container and wait for it to set.
  5. Place the rest of the flour in another container and make a well in the center. There, put the water and flour mixture, as well as grated queso costeño, kneading until a manageable dough is achieved.
  6. Form the arepas and grill or fry them. Serve with suero costeño.
