gr queso costeño, grated
pinch salt to taste
Directions
- Clean the rice, wash it, drain it, and let it dry in the sun for 1 hour.
- When thoroughly dry, pass it through a mill to obtain rice flour.
- In a pot, place the water with salt to taste, and when it boils, gradually add 10 tablespoons of rice flour, stirring continuously to prevent lumps from forming.
- Pour this mixture into a container and wait for it to set.
- Place the rest of the flour in another container and make a well in the center. There, put the water and flour mixture, as well as grated queso costeño, kneading until a manageable dough is achieved.
- Form the arepas and grill or fry them. Serve with suero costeño.
