Directions
- The first thing to do is select a good papayuela: the skin should be smooth and evenly yellow, with a very intense smell, and ideally it should be medium-sized.
- After washing the fruits well, peel them and put them in water.
- Having the papayuelas peeled, cut them in half vertically and with a spoon remove all the seeds.
- Then cut the halves into julienne strips and in a pot cook them in water giving them two boils (change the water after the first boil), which softens the fruit a bit and achieves a better texture in the final result.
