pinch achiote, annatto or coloring to taste
oil for frying
Directions
- Kill the turtle or morrocoy tortoise and remove the shell.
- After removing the pieces, peel them in hot water and wash them.
- Then chop them and cook them with salt to taste.
- When they are tender, remove from the heat and shred. Set aside.
- In a pot, heat lard or oil and add onion, cumin, achiote and salt. Fry well.
- Add the shredded turtle meat to the mixture and fry a little more. Remove from heat.
- Make a dough with corn flour and water.
- Roll out the dough and make circular shapes; on these, place a portion of the meat, fold and seal the edges forming half moons.
- In abundant hot oil, fry the empanadas until golden brown.
