Directions
- In a saucepan, dissolve the starch with a little milk, stirring well and being careful not to form lumps.
- Pour in the remaining milk and sugar and dissolve it.
- Add the lemon zest and place the saucepan over low heat, always stirring with a wooden spoon, to prevent the cream from sticking to the bottom.
- When the cream becomes thick and velvety (it should not boil), pour it into a mold or into dampened small cups.
- Cool in the refrigerator.
