Biancomangiare - Milk Cream

Ingredients
500 ml whole milk
90 gr sugar
40 gr wheat starch
1 piece(s) lemon zest
Directions
  1. In a saucepan, dissolve the starch with a little milk, stirring well and being careful not to form lumps.
  2. Pour in the remaining milk and sugar and dissolve it.
  3. Add the lemon zest and place the saucepan over low heat, always stirring with a wooden spoon, to prevent the cream from sticking to the bottom.
  4. When the cream becomes thick and velvety (it should not boil), pour it into a mold or into dampened small cups.
  5. Cool in the refrigerator.
